Born and Raised in Sudbury, Ontario.
Trained
Honors Graduate of Stratford Chefs School in Stratford Ontario.
Worked
Trained with Chef Michael Smith at the Inn at Bay Fortune. Craig appears weekly
alongside Chef Michael on Life's Network's The Inn Chef. Craig also was the
Chef at the Cheapside Cafe in the Art Gallery of Nova Scotia.
How he got into cooking
"While attending the University of Western Ontario, I worked in various
restaurants to pay for school. From then on, I was hooked on cooking."
First thing he ever cooked
"I remember baking bread with my grandmother. I remember the smell and feel of
the dough and try to duplicate it every day in my kitchen."
Favorite Place to eat
"Maple in Halifax. Maple has a seamless package from lights, to music, linen,
artwork, and of course the food."
Recipe Tip
"Toast and grind spices fresh. It adds an amazing depth of flavor to your food."
What he'd be if he weren't a chef
"I can't imagine not cooking."
Favorite Kitchen Tool
"My microplane grater. It's perfect for zesting, grating hard cheeses, or even
grating whole nutmeg."
Menu Bomb
"I've always cooked food that all would love to eat. This has served as a good
guideline for me. I hope I haven't bombed too badly."
