Don Walker
Background
Don Walker grew up in the Halifax / Dartmouth area. Later in
life he joined the Canadan Armed Forces and participated in this nation's
defence during the Persian Gulf conflict.
Trained
This chef received practical training locally also, under the
tutelidge of Chefs Margaret Carson and Maurizio Berteasi, then at the
reknowned Culinary Institute of America and further education at St. Mary's
University.
Worked
Much of Chef Walker's culinary career was at the very popular Il
Mercato Ristorante. Today, he is President of the newly formed Chefs By
Design.
How he got into cooking
"I was in search of a job after graduating
university when I met Maurizio Berteasi, owner of DaMaurizio and Il
Mercato... the rest is history."
First thing he ever cooked
"I was very active in the kitchen as a
child. Breakfast was my specialty - French Toast, Scrambled Eggs and
Pancakes."
Favorite Place to eat
"For casual I really like the Granite Brewery (great
beer!). For formal dining, DaMaurizio is my favourite."
Chef Walker is well known and respected in the Halifax
restaurant scene. His personality belies the streotype often given chefs as
hot tempered and egotistical. He is a calm relationship building gentleman
with a keen business sense. These character traits will serve Chefs By
Design well as they grow in the Atlantic Canadian marketplace.
