Dave Watters
Background
Born and raised in Halifax, Dave has lived in the Metro area all his life. He
now resides in Dartmouth.
Trained
He began his cooking career in 1974 when he was hired by Steak & Stein
Family Restaurant, one of the region's most successful restaurant operations.
His dedication and will to learn kept him at Steak & Stein as he trained and
developed within the policies and procedures of the original Tacoma Drive
location.
Worked
Dave has been in the foodservice industry for over 25 years. He left Steak &
Stein for a brief period in the late 70's to take a position with The Keg
Restaurant in Halifax. He returned shortly afterwards and has been part of the
Steak & Stein dynasty ever since. When success and growth called for an
additional outlet, he moved to the new Halifax location where he has remained
until this day.
First thing he ever cooked
"Believe it or not, the first thing I ever cooked was a roast pork dinner.
Veggies and everything!"
Favorite Place to eat
"Other than Steak & Stein, I really enjoy Chinese food. So when it comes time
to satisfy the craving, I go to the Garden View Restaurant. It's family owned,
very well established and they do a great job of authentic Chinese food."
Recipe Tip
"When cooking steaks over an open grill, or even a barbeque, always have a
spritzer bottle of water handy to extinguish any flare-ups."
What he'd be if he weren't a chef
"Let's see...if I weren't a chef I would probably have stuck with my original
career as a painter. It's relaxing and fulfilling."
Favorite Kitchen Tool
"It would most definitely be my French knife."
Menu Bomb
"Derby-style chicken breasts! With the success of this savoury secret recipe for
our steaks, I figured it would be a big hit...hands down! It just didn't seem to
work the same for chicken. The flavour wasn't exactly what I expected."
