Guy Leclair
Background
Born and raised in Charlottetown, PEI.
Trained
Completed his training at Holland College in Charlottetown,
PEI at the Culinary Institute.
Worked
He worked at Dundee Arms Inn for 12 years as an apprentice
and the Head Chef until 1993. Guy gained much administrative experience as the
General Manager for Murphy Investment Limited working with their 10 different
properties for two years. Guy has been happily situated at the Merchantman Pub
ever since.
How he got into cooking
His Mom was a dining room manager while he was growing up and he
worked there washing dishes.
First thing he ever cooked
His dad was the cook in the family as Guy remembers helping his dad
cook a Swiss steak in the crock pot for his Mom when she got home from work.
Favorite Place to eat
"Smuggler's Inn in Calgary, Alberta and the Press Gang in Halifax,
Nova Scotia."
Recipe Tip
"Whenever possible use fresh and local herbs. A la minute cooking
should be done on medium heat, so that it will not disguise the taste and will
keep the natural flavors in tact."
What he'd be if he weren't a chef
"The hospitality Industry has always intrigued me therefore I
wouldn't be working anywhere else as I love working with people."

"Tongs are the most versatile piece of equipment in a kitchen."
