Bruschetta

Ingredients

  • 2 large Tomatoes, thinly sliced
  • 3 tbsp. fresh Basil
  • 1 clove Garlic, peeled and crushed
  • ¼ cup fresh Parsley, chopped
  • 1 pinch Salt & Pepper
  • 1 tbsp. Olive Oil
  • 2 tbsp. Parmesan Cheese
  • 6 slices 1" thick Baguette or French Bread

Method

  1.  In a Bowl, combine Basil, Garlic, Salt, Pepper and Parsley, set aside.
  2. Place bread on a Baking Sheet and Broil until lightly browned on both sides.
  3. Brush each piece of bread lightly with Olive Oil
  4. Lay tomatoes on bread and top with herb mixture
  5. Sprinkle with Parmesan.
  6. Place under the broiler for a few minutes, serve immediately.
  7. Enjoy!
