Bruschetta
Ingredients
- 2 large Tomatoes, thinly sliced
- 3 tbsp. fresh Basil
- 1 clove Garlic, peeled and crushed
- ¼ cup fresh Parsley, chopped
- 1 pinch Salt & Pepper
- 1 tbsp. Olive Oil
- 2 tbsp. Parmesan Cheese
- 6 slices 1" thick Baguette or French Bread
Method
- In a Bowl, combine Basil, Garlic, Salt, Pepper and Parsley, set aside.
- Place bread on a Baking Sheet and Broil until lightly browned on both sides.
- Brush each piece of bread lightly with Olive Oil
- Lay tomatoes on bread and top with herb mixture
- Sprinkle with Parmesan.
- Place under the broiler for a few minutes, serve immediately.
