Almond Biscuits
Ingredients
- 5/8 cup Sugar
- 5/8 cup Butter
- 1/3 cup Almonds, blanched, lightly toasted and chopped
- 7/8 cup Flour, sifted
- 2 tbsp Ground almonds
- 1 Pinch Salt
- 4 Egg Whites
- Grated zest of one lemon
Method
- Heat the oven to 350°F. Cream the sugar and butter together until light and fluffy. Stir in the almonds, flour and ground almonds, salt and lemon zest.
- Lightly whisk the egg whites and fold them into the mixture. Drop small spoons of the mixture on to a well-buttered baking sheet, spacing them out well. Bake for about 15-20 minutes until golden
