Almond Biscuits

 

Ingredients

  • 5/8 cup Sugar 
  • 5/8 cup Butter
  • 1/3 cup Almonds, blanched, lightly toasted and chopped 
  • 7/8 cup Flour, sifted
  • 2 tbsp Ground almonds
  • 1 Pinch Salt 
  • 4 Egg Whites 
  • Grated zest of one lemon

Method

  1. Heat the oven to 350°F. Cream the sugar and butter together until light and fluffy. Stir in the almonds, flour and ground almonds, salt and lemon zest.
  2. Lightly whisk the egg whites and fold them into the mixture. Drop small spoons of the mixture on to a well-buttered baking sheet, spacing them out well. Bake for about 15-20 minutes until golden
  3. Enjoy!
