Irish Soda Bread
Ingredients
- 2 cups All-Purpose Flour
- 2 cups Whole Wheat Flour
- .25 cup Brown Sugar
- 1 tbsp. Baking Powder
- 1 tbsp. Baking Soda
- 1 tbsp. Salt
- 1 cup Dried Currants
Optional Dry:
- 1 tsp. Dried Basil
- ½ tsp. Dried Thyme
- ½ tsp. Dried Oregano
Wet:
- 1½ cups Buttermilk
- 2 large Eggs
- 2 tbsp. Melted Butter
Method
- Preheat oven to 375.
- In a large bowl combine all dry ingredients, mix well.
- In another bowl mix all wet ingredients, beat slightly.
- Add wet ingredients to the dry ingredients, stir with a wooden spoon to just combine ingredients.
- Turn dough out on lightly floured surface, knead until dough comes together.
- Divide dough into two equal portions, place on a baking sheet lined with parchment paper.
- Make an x in the top of the two balls about a _" deep with a sharp knife.
- Bake in oven for 30 to 40 minutes, or until brown and crusty.
