Irish Soda Bread

Ingredients

  • 2 cups All-Purpose Flour
  • 2 cups Whole Wheat Flour
  • .25 cup Brown Sugar
  • 1 tbsp. Baking Powder
  • 1 tbsp. Baking Soda
  • 1 tbsp. Salt
  • 1 cup Dried Currants

    Optional Dry:
  • 1 tsp. Dried Basil
  • ½ tsp. Dried Thyme
  • ½ tsp. Dried Oregano

    Wet:
  • 1½ cups Buttermilk
  • 2 large Eggs
  • 2 tbsp. Melted Butter

Method

  1. Preheat oven to 375.
  2. In a large bowl combine all dry ingredients, mix well.
  3. In another bowl mix all wet ingredients, beat slightly.
  4. Add wet ingredients to the dry ingredients, stir with a wooden spoon to just combine ingredients.
  5. Turn dough out on lightly floured surface, knead until dough comes together.
  6. Divide dough into two equal portions, place on a baking sheet lined with parchment paper.
  7. Make an x in the top of the two balls about a _" deep with a sharp knife.
  8. Bake in oven for 30 to 40 minutes, or until brown and crusty.
  9. Enjoy!
