Double Cooked Two Apple Pie

Ingredients

  • 4 tbsp unsalted butter
  • 5 Granny Smith apples, peeled, cored and cut into 1/2-inch wedges
  • 5 Golden Delicious apples, peeled, cored and cut into 1/2-inch wedges
  • ¼ cup granulated sugar
  • ½ tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • double crust pie dough

Method

  1. In a large frying pan, heat the butter over medium heat. 
  2. Add the apples, sugar and cinnamon. 
  3. Cook, stirring often, until the apples have reduced in volume by about half, 5 to 7 minutes. 
  4. Transfer to a large bowl and let cool completely.
  5. Stir in the flour. 
  6. Preheat the oven to 375 degrees.
  7. Divide the dough into two portions, one twice as large as the other. 
  8. Roll out the larger portion of the dough into a round about 1/8-inch thick, and use it to line a 10-inch pie pan.
  9. Fill the pastry shell with the cooled apples.
  10. Roll out the smaller portion of dough into a round about 1/8-inch thick and center over the pie. 
  11. Seal and flute the edges. 
  12. Cut an 'X' in the center of the top crust.
  13. Bake until the filling is bubbling and the crust is golden brown, 35-45 minutes. 
  14. If the pastry browns too quickly, cover loosely with foil.
  15. Let cool completely before serving. 
  16. Enjoy!
