Double Cooked Two Apple Pie
Ingredients
- 4 tbsp unsalted butter
- 5 Granny Smith apples, peeled, cored and cut into 1/2-inch wedges
- 5 Golden Delicious apples, peeled, cored and cut into 1/2-inch wedges
- ¼ cup granulated sugar
- ½ tsp ground cinnamon
- 2 tbsp all-purpose flour
- double crust pie dough
Method
- In a large frying pan, heat the butter over medium heat.
- Add the apples, sugar and cinnamon.
- Cook, stirring often, until the apples have reduced in volume by about half, 5 to 7 minutes.
- Transfer to a large bowl and let cool completely.
- Stir in the flour.
- Preheat the oven to 375 degrees.
- Divide the dough into two portions, one twice as large as the other.
- Roll out the larger portion of the dough into a round about 1/8-inch thick, and use it to line a 10-inch pie pan.
- Fill the pastry shell with the cooled apples.
- Roll out the smaller portion of dough into a round about 1/8-inch thick and center over the pie.
- Seal and flute the edges.
- Cut an 'X' in the center of the top crust.
- Bake until the filling is bubbling and the crust is golden brown, 35-45 minutes.
- If the pastry browns too quickly, cover loosely with foil.
- Let cool completely before serving.
