Eggnog Cookies

Ingredients

  • 2-1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1-1/4 cups sugar
  • 3/4 cup salted butter, softened
  • 1/2 cup eggnog
  • 1 tsp vanilla extract
  • 2 large egg yolks
  • 1 tbsp ground nutmeg

Method

  1. Preheat oven to 300º F.
  2. In a medium bowl, combine flour, baking powder, cinnamon and 1/2 teaspoon nutmeg. 
  3. Mix well with a wire whisk and set aside.
  4. In a large bowl, cream the butter and sugar with an electric mixer to form a grainy paste. 
  5. Add eggnog, vanilla and egg yolks, and beat at medium speed until smooth. 
  6. Add the flour mixture and beat at low speed just until combined. Do not over mix.
  7. Drop by rounded teaspoons onto ungreased cookie sheets, 1 inch apart.
  8. Sprinkle lightly with nutmeg.
  9. Bake for 23 to 25 minutes or until bottoms turn light brown. 
  10. Transfer to cool, flat surface immediately with a spatula.
  11. Enjoy!
