Plum Phyllo Pockets

A recipe contribution from Robert Moore, at Pastaman in Halifax, Nova Scotia.

Ingredients

  • 4 oz skim milk soft cheese
  • 1 tbsp sugar
  • 8 large, firm plums, halved and stoned
  • ½ tsp ground cloves
  • 8 sheets phyllo pastry
  • canola oil for brushing
  • icing sugar to sprinkle

Method

  1. Preheat oven at 350 C. 
  2. Mix together the cheese, sugar and cloves.
  3. Cut the plum into halves, and spoon some of the cheese mixture in the middle.
  4. Spread out the pastry sheet - one at a time, brushing them with oil.
  5. Place plum in the middle of the phyllo folding each corner to the center.
  6. Bake for 15 - 18 minutes until golden brown.
