Pumpkin Roll
Ingredients
- 3 Eggs
- 1 cup Sugar
- 2/3 cup Pumpkin, mashed or canned
- 1 tsp Lemon juice
- 3/4 cup Flour
- 2 tsp Cinnamon
- 1 tsp Nutmeg
- 1 tsp Ginger
- 1/2 tsp Salt
- 1 tsp Baking powder
- 1 cup Chopped nuts
- Powdered sugar
Filling
- 1 cup Sugar
- 6 oz Cream cheese
- 4 tbsp Butter
- 1/2 tsp Vanilla
Method
- Beat together 3 Eggs and 1 cup of sugar (about 5 min).
- Fold in the pumpkin and the lemon juice. Then fold in the flour, spices, salt, and baking
powder.
- Pour into a greased and floured jelly roll pan or lipped cookie sheet
and sprinkle with chopped nuts. Bake at 350ºF for 15 minutes.
- While baking the cake roll, combine the filling ingredients and mix
by hand or with a rotary mixer until smooth
- Dust a kitchen towel well with powdered sugar. Remove the cake roll from the pan
and immediately place on sugared towel. Roll up cake in the towel and let
cool. Unroll and spread filling on cake. Roll cake and filling into dessert roll. Chill and cut into 1/2 inch slices.
