Roses in the Snow 
   

Ingredients

  • 1½ cup sweetened raspberry, cherry, or cranberry juice
  • ½ cup potato flour or cornstarch
  • 4 egg whites
  • 1 ½ cup 35% cream 
  • 2 ½ oz  icing sugar 
  • sugar

Method

  1. Gently heat the fruit juice. 
  2. Moisten the potato flour with 1 cup water and add it to the fruit juice. 
  3. Let the mixture cook gently until well thickened and remove from the heat.
  4. Whisk the egg whites until stiff and fold them carefully into the thickened juice mixture. 
  5. Mound the mixture on a serving dish and refrigerate.
  6. Thirty minutes before serving, whisk the cream until stiff, then whisk in the sugar. 
  7. Take large dollops of the whipped cream with a spoon and arrange them like large snowflakes or tuffs of cotton wool around the fruit juice dome.
