Tiramisu

A recipe contribution from Gus Abato, At the Italian Market in Halifax, Nova Scotia.

Ingredients

  • 500g mascarpone cheese
  • 400g ladyfinger cookies
  • 6 tbsp sugar
  • 2 cups espresso (or very strong black coffee)
  • 6 eggs (separated)
  • 1oz Marsala or Tia Maria
  • 1oz cocoa powder

Method

  1. Separate egg yolks from egg whites. 
  2. Beat egg yolks with sugar until creamy smooth. 
  3. Add mascarpone cheese and liquor.
  4. Beat egg whites until firm and fluffy. 
  5. Fold into mascarpone mixture.
  6. Dip ladyfingers quickly into coffee, and layer bottom of dish or pie plate.
  7. Cover ladyfingers with mascarpone mixture.
  8. Repeat cookies and mascarpone layers. 
  9. Sprinkle top with cocoa.
  10. Refrigerate before serving. 
  11. May also be frozen.
