Red Pepper Coulis

Ingredients

  • 2 roasted red peppers
  • ½ cup olive oil
  • juice of 1 lemon
  • salt and pepper

Method

  1. Peel and seed the pepper, place in a food processor and puree with the olive oil, lemon juice and salt and pepper until smooth. Drizzle over Papillotte of Sole and serve immediately.
