Shrimp in Love

Ingredients

  • 12 large shrimp
  • 2 tbsp. unsalted butter
  • ¼ cup Pernod
  • 1 bay leaf
  • 1 shallot, finely diced
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1/3 cup heavy cream (35%)

Method

  1. Remove the shells from the shrimp and de-vein. Sauté the shrimp in the unsalted butter until they are pink then remove from the pan and reserve in a warm area.
  2. To the pan add the bay leaf, the diced shallot, salt and pepper and sauté until the shallots are translucent. Add the Pernod and reduce by half, then add the cream and reduce by half. 
  3. Place two shrimp on 6 individual plates and have them form a heart by having the tail ends touch and the top ends touch. Drizzle with sauce and serve immediately.
