Catfish with Pecans

Ingredients

  • 4 - 10 oz catfish fillets 
  • 2 tbsp olive oil
  • ˝ tbsp ground black pepper
  • 4 green onions, chopped
  • ˝ cup red pepper, julienned
  • 2 cloves garlic, minced
  • 2 tbsp pecans, finely chopped

Method

  1. Rinse fillets in cold water; pat dry. 
  2. Brush fillets with 1 tablespoon oil and sprinkle with black pepper.
  3. Heat remaining oil in sauté pan and add onions, bell pepper and garlic.
  4. Simmer for about 5 minutes and remove from heat.
  5. Place fillets on a medium-hot grill and cook for about 6 minutes.
  6. Place fillets on plate and cover with pepper/onion mixture. 
  7. Garnish with chopped pecans and serve.
  8. Enjoy!
