Grilled Meat Kabobs
Ingredients
- 12 oz. lean tender beef (tenderloin, filet or rump)
- 2 tbsp. light soy sauce
- 2 tsp. sugar
- 1 tsp. sherry or brandy
- 1 large garlic clove, mashed
- 3 large spicy sausage
- 1 large boneless, skinless chicken breast
- 2 tbsp. olive or vegetable oil
- 6 large button mushrooms
- 6 large cherry tomatoes
- 2 tbsp. melted butter
- 2 salt & pepper to taste
- 2 lemon pepper to taste
Method
- Cut the beef into 1-inch (2.5-cm) cubes.
- In a shallow bowl, mix the salt and pepper, soy sauce, sugar and sherry.
- Add the beef cubes and marinate for 20 minutes.
- Cut the chicken crosswise into 6 pieces and rub with oil and garlic, then sprinkle with lemon pepper.
- Cut the sausages in halves and set aside.
- When the beef has been marinated, thread all the meats alternately on oiled metal skewers, adding a mushroom and tomato to each.
- Brush the kabobs with melted butter and cook on a barbecue grill, turning frequently, until done.
