Sherry Glazed Ham

Ingredients

  • 1   4-5 lb. boneless smoked ham
  • ¼ cup packed light brown sugar
  • 3 tbsp sherry vinegar
  • 1 tbsp dry sherry
  • 1 tsp dry mustard
  • ¼ tsp ground cloves

Method

  1. Place ham in a large pot or deep roasting pan and add enough cold water to cover as much as possible. 
  2. Bring to a simmer over high heat. Reduce the heat to low and simmer for 45 minutes, turning the ham occasionally. 
  3. Drain and let cool slightly.
  4. Preheat oven to 325°F. 
  5. Cut off the rind from the ham, leaving a thin layer of fat. 
  6. Using the tip of a sharp knife, score the fat in a diamond pattern. 
  7. Place the ham on a roasting rack set in a foil-lined roasting pan.
  8. Mix together all the remaining ingredients in a bowl and set aside.
  9. Bake the ham until the ham's internal temperature reaches 160°F, using a meat thermometer, approximately 2 hours. 
  10. During the last 30 minutes of baking, spread the ham with the glaze, and baste occasionally with the juices in the pan.
  11. Increase the oven temperature to 450°F and continue baking until the glaze is tinged with brown spots, about 10 minutes. 
  12. Transfer to a platter and let stand for at least 15 minutes before carving.
