Sherry Glazed Ham
Ingredients
- 1 4-5 lb. boneless smoked ham
- ¼ cup packed light brown sugar
- 3 tbsp sherry vinegar
- 1 tbsp dry sherry
- 1 tsp dry mustard
- ¼ tsp ground cloves
Method
- Place ham in a large pot or deep roasting pan and add enough cold water to cover as much as possible.
- Bring to a simmer over high heat. Reduce the heat to low and simmer for 45 minutes, turning the ham occasionally.
- Drain and let cool slightly.
- Preheat oven to 325°F.
- Cut off the rind from the ham, leaving a thin layer of fat.
- Using the tip of a sharp knife, score the fat in a diamond pattern.
- Place the ham on a roasting rack set in a foil-lined roasting pan.
- Mix together all the remaining ingredients in a bowl and set aside.
- Bake the ham until the ham's internal temperature reaches 160°F, using a meat thermometer, approximately 2 hours.
- During the last 30 minutes of baking, spread the ham with the glaze, and baste occasionally with the juices in the pan.
- Increase the oven temperature to 450°F and continue baking until the glaze is tinged with brown spots, about 10 minutes.
- Transfer to a platter and let stand for at least 15 minutes before carving.
