Souvlaki

Ingredients

  • 2 lbs lamb - cut into 1½ inch chunks
  • 2 cups dry red wine
  • 2 cloves garlic - minced
  • 1 tsp dried Oregano
  • 2 tsp lemon rind
  • ¼ cup olive oil

Method

  1. Place the lamb in a large bowl. 
  2. Pour in the wine and sprinkle minced garlic and oregano. stir in the lemon and drizzle with olive oil. 
  3. Cover tightly with plastic wrap and refrigerate 12 hours or overnight. 
  4. Stir the mixture several times during the marination period. 
  5. About 30 minutes before serving, drain off and discard the marinade.
  6. Thread the chunks of meat onto long skewers, brushing with a little olive oil. 
  7. Over medium coals, barbeque the Souvlaki until it's done the way you like it.
  8. Serve on a bed of rice and with Tzaziki Sauce or wrapped in a warm pita with chopped lettuce, tomatoes and Tzaziki sauce..
  9. Enjoy!
