Chicken Vegetable Kabobs

Ingredients

  • 1½ lbs boneless chicken breast - cut into strips
  • ¼ cup lemon juice
  • 2 tsp dried oregano
  • 2 tbsp olive oil
  • 2 cloves garlic - chopped
  • 1 zucchini - sliced
  • 1 onion cut into chunks
  • 12 cherry tomatoes
  • salt and pepper to taste

Method

  1. Combine all the ingredients above except the salt and pepper in a glass dish. 
  2. Cover and refrigerate at least 30 minutes. 
  3. Thread chicken strips, and vegetables alternately onto wooden or metal skewers.
  4. Sprinkle with salt and pepper. 
  5. Grill 8 minutes, turning once, until chicken is done.
  6. Enjoy!
