Chicken Vegetable Kabobs
Ingredients
- 1½ lbs boneless chicken breast - cut into strips
- ¼ cup lemon juice
- 2 tsp dried oregano
- 2 tbsp olive oil
- 2 cloves garlic - chopped
- 1 zucchini - sliced
- 1 onion cut into chunks
- 12 cherry tomatoes
- salt and pepper to taste
Method
- Combine all the ingredients above except the salt and pepper in a glass dish.
- Cover and refrigerate at least 30 minutes.
- Thread chicken strips, and vegetables alternately onto wooden or metal
skewers.
- Sprinkle with salt and pepper.
- Grill 8 minutes, turning once, until chicken is done.
- Enjoy!
