Chicken & Mushroom Marsala

Ingredients (Serves two)
- 2 generously portioned boneless skinless chicken breasts
- 3 oz. (80g) Button mushrooms, sliced
- 1 tsp (5ml) chopped garlic
- 1/4 cup (60ml) cup flour
- 1 cup (250ml) chicken stock
- 1/4 cup (60ml) sweet Marsala wine
- salt & pepper to taste
- 1/4 cup (60ml) cooking oil (recommend Canola)
Method
- Wash chicken and season with salt & pepper. Coat with flour.
- Heat oil in heavy sauté pan. Add chicken and brown on both sides, about 5 minutes per side.
Add garlic and mushrooms. Cook for a couple of minutes.
- Deglaze pan with Marsala, then add chicken stock. Reduce to desired consistency. Estimated cooking time about 15 minutes.
