Chicken & Mushroom Marsala

Ingredients
(Serves two)

  • 2 generously portioned boneless skinless chicken breasts
  • 3 oz. (80g) Button mushrooms, sliced
  • 1 tsp (5ml) chopped garlic
  • 1/4 cup (60ml) cup flour
  • 1 cup (250ml) chicken stock
  • 1/4 cup (60ml) sweet Marsala wine
  • salt & pepper to taste
  • 1/4 cup (60ml) cooking oil (recommend Canola)

Method

  1. Wash chicken and season with salt & pepper. Coat with flour.
  2. Heat oil in heavy sauté pan. Add chicken and brown on both sides, about 5 minutes per side. Add garlic and mushrooms. Cook for a couple of minutes.
  3. Deglaze pan with Marsala, then add chicken stock. Reduce to desired consistency. Estimated cooking time about 15 minutes.
  4. Enjoy!
