Roasted Chicken Breast with Lemon, Garlic and Rosemary

Ingredients

  • 8 cloves garlic, minced
  • 8 oz lemon juice
  • 1½ tsp. fresh ground black pepper
  • 1 tsp. salt
  • ¼ cup fresh rosemary, coarsely chopped
  • 2 oz olive oil
  • 2½ lbs. chicken breast halves, without skin
  • 8 large lemons, Sliced

Method

  1. Whisk together first 5 ingredients until well blended.
  2. Slowly incorporate olive oil.
  3. Divide mixture into 2 heavy-duty, zip-top plastic bags; add chicken pieces and lemon slices. Marinate for 1 hour.
  4. Line 2 shallow roasting pans with aluminum foil.
  5. Remove chicken from marinade and arrange in pans.
  6. Drizzle with marinade and arrange lemon slices on top.4. Line 2 shallow roasting pans with aluminum foil.
  7. Bake at 400deg F for 45 minutes or until done, basting with pan juices twice during cooking.
