Roast Turkey

Ingredients

  • 16 to 20 lb whole turkey, defrosted
  • Salt and Pepper
  • 2 tbsp - ¼ cup Butter or margarine

Method

  1. Heat oven to 325 F/160 C. Rinse turkey and pat dry with paper towel. Sprinkle cavity lightly with salt and pepper. Secure legs together with string. Tuck wings tips under. Place turkey in large roasting pan.
  2. Place butter in 1-cup (250ml) measure. Microwave at high for 45 seconds or until melted. Brush turkey with butter. Sprinkle outside of turkey with salt and pepper. Insert meat thermometer in thigh, cover with foil.
  3. Estimate total cooking time at 20-30 minutes per pound. Bake until internal temperature in inner thigh registers 185 F/ 85 C. During last 30 minutes, remove foil. Let stand, tented with foil, for 15 to 20 minutes before carving. Reserve drippings for gravy.
