Smoked Chicken with Blueberry Jus

Ingredients
(Serves six)

  • 6 sheets egg roll pastry (deep-fried)
  • 8 ounce smoked chicken (cut julienne)
  • 8 ounce bean sprouts (sautéed)
  • 3 tsp. light soya sauce
  • 1 bunch green onion (sliced)
  • salt and pepper to taste
  • 1 red pepper (cut julienne)
  • 6 sprig parsley (as garnish)
  • 3 ounce blueberries (reduction)
  • 3 tbsp. red wine vinegar (reduction)
  • 2 tbsp. honey
  • hot fat (for deep frying)

Method

  1. Deep-fry the pastry and towel dry
  2. In a saucepan sauté the bean sprouts, smoked chicken, red pepper, green onions, then add the soya and salt and pepper. Then pour over pastry put all other ingredients and simmer, (blueberry), vinegar, honey, salt and pepper, reduce for a minute.
  3. The plate: A ten inch plate pastry in the middle, bean sprouts over pastry with the parsley sprig, red pepper julienne and the sauce drizzled around.
  4. Enjoy!
