Apple Butter

Ingredients

  • 6 pounds unpeeled, tart apples     
  • 6 cups apple cider or apple juice
  • 3 cups sugar
  • 2 tsp ground cinnamon
  • ˝ tsp ground clove

Method

  1. Core and quarter apples.
  2. In a heavy saucepan, cook apple with apple cider or apple juice until soft, approximately 30 minutes.
  3. Press through a food mill; boil gently for 30 minutes, stirring.
  4. Stir in sugar, cinnamon and ground cloves.
  5. Cook over low heat, stirring, until sugar dissolves.
  6. Boil gently, stirring often, to desired thickness, about 1 hour.
  7. Pour into jars, adjust lids and process in boiling-water bath for 10 minutes, after water returns to boil.
