Barley Salad

Ingredients

  • 2 cups water
  • 1/2 cup uncooked pearl barley
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 2 cups finely chopped and seeded tomato
  • 1 cup thinly sliced spinach
  • 1/2 cup finely chopped green bell pepper
  • 1/2 cup chopped seeded peeled cucumber
  • 1/2 cup diced mozzarella cheese
  • 2 tsp dry oregano

Method

  1. Bring water to a boil in a large saucepan. Add barley and cover; reduce heat and simmer 45 minutes. Drain. 
  2. Combine the lemon juice, oil and salt in large bowl; stir well with a whisk. Add barley, tomato and remaining ingredients. Toss gently to coat.
  3. Enjoy!

Yield: 5 servings
