Bok Choy Salad

Ingredients

Dressing

  • 2 tbsp sugar
  • 3 tbsp cider vinegar
  • 3 tbsp soy sauce
  • 2 tsp peanut butter
  • 1/2 tsp curry powder
  • 1/4 tsp crushed red pepper

Salad

  • 1/4 cup unsalted dry roasted peanuts
  • 3 cups bok choy, sliced thinly
  • 1 red bell pepper, sliced into very thin strips
  • 1/2 cup shredded carrot
  • 1/4 cup diagonally sliced green onions

Method

  1. Prepare dressing by combining all the dressing ingredients in a large bowl. Whisk.
  2. Heat a non stick skillet over medium-high heat. Add peanuts and sauté for 4 minutes or until browned. Remove from heat. Combine peanuts with remaining ingredients in large bowl.
  3. Drizzle dressing over salad and toss gently to coat..
  4. Enjoy!

Yield: 5 servings
