Chicken Greek Salad

Ingredients

Dressing

  • 1/4 cup low-fat chicken broth
  • 2 tbsp red wine vinegar
  • 1 tsp sugar
  • 1 tsp dried oregano
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 garlic clove, minced

Salad

  • 4 x 4 oz. boneless chicken breasts
  • cooking spray
  • 8 cups romaine lettuce, torn into bite-sized pieces
  • 1 cup sliced cucumber 
  • 8 pitted Kalamata olives, sliced
  • 4 plum tomatoes, quartered
  • 2 slices red onion, rings separated
  • 1/4 cup crumbled feta cheese

Method

  1. Prepare grill or broiler. 
  2. Combine the chicken broth, red wine vinegar, sugar, oregano, olive oil, salt, pepper and garlic in a small bowl. Brush the chicken breasts with 2 tbsp of this dressing; set aside the rest of the dressing.
  3. Place chicken on grill or broiler pan coated with cooking spray. Cook for 5 minutes on each side or until chicken is done. Slice chicken into 1/4 inch strips.
  4. Combine the lettuce, cucumber, olives, tomatoes and onion rings in a.large bowl and toss with remaining dressing.
  5. Top with the chicken strips and the feta cheese.
  6. Enjoy!

Yield: 4 servings
