Chicken Greek Salad
Ingredients
Dressing
- 1/4 cup low-fat chicken broth
- 2 tbsp red wine vinegar
- 1 tsp sugar
- 1 tsp dried oregano
- 2 tsp olive oil
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 garlic clove, minced
Salad
- 4 x 4 oz. boneless chicken breasts
- cooking spray
- 8 cups romaine lettuce, torn into bite-sized pieces
- 1 cup sliced cucumber
- 8 pitted Kalamata olives, sliced
- 4 plum tomatoes, quartered
- 2 slices red onion, rings separated
- 1/4 cup crumbled feta cheese
Method
- Prepare grill or broiler.
- Combine the chicken broth, red wine vinegar, sugar, oregano, olive
oil, salt, pepper and garlic in a small bowl. Brush the chicken
breasts with 2 tbsp of this dressing; set aside the rest of the
dressing.
- Place chicken on grill or broiler pan coated with cooking spray.
Cook for 5 minutes on each side or until chicken is done. Slice
chicken into 1/4 inch strips.
- Combine the lettuce, cucumber, olives, tomatoes and onion rings in
a.large bowl and toss with remaining dressing.
- Top with the chicken strips and the feta cheese.
- Enjoy!
Yield: 4 servings
