Corn and Barley Salad

Ingredients

  • 1 cup pearl barley
  • ¼ cup extra virgin olive oil
  • 3 tbsp lemon juice
  • 1 tsp Dijon mustard
  • salt and pepper
  • 2 cups cooked fresh corn kernels
  • ¼ cup diced red pepper
  • ¼ cup diced green pepper
  • ¼ cup chopped red onion
  • 1/3 cup finely chopped basil or parsley

Method

  1. Bring a large pot of salted water to boil. add barley. 
  2. Cook uncovered until tender, about 20 to 25 minutes. 
  3. Drain well.
  4. Prepare dressing by whisking oil with lemon juice, mustard, about 1 teaspoon salt and pepper to taste until blended. Set aside.
  5. In a large bowl, stir together warm barley, corn, red and green peppers and red onion. 
  6. Toss with dressing, then basil or parsley. 
  7. Enjoy!
