Red and Green Salad

Ingredients

  • 2 lbs. prepared mixed greens, available in most grocery stores
  • 1 lg. bunch watercress
  • 12 lg. radishes
  • ¼ cup olive oil
  • 4 tbsp. red wine vinegar
  • salt and pepper to taste

Method

  1. Rinse mixed greens and watercress.
  2. Wash the radishes and remove the stems, leaves and roots.
  3. Quarter, or if especially large, cut into eighths.
  4. Place radishes in a bowl, cover with cold water, add a little salt and leave for 1 hour. Shortly before serving, drain and dry radishes and place them in a serving bowl.
  5. Add the mixed greens and watercress.
  6. Beat together the olive oil and red wine vinegar.
  7. Season with salt and pepper.
  8. Pour over the salad and toss well.
