Warm Winter Salad with Turkey and Mixed Fusilli

A recipe contribution from Robert Moore, at Pastaman in Halifax, Nova Scotia.

Ingredients

600g  PASTAMAN mixed fusilli
1/3 cup extra virgin olive oil
¼ cup white wine vinegar
1 cup mushrooms, sliced
¾ cup red onions, halved and sliced
1 cup plum tomatoes, diced
1½ cups cooked turkey, diced
¼ cup parmesan cheese, grated
Salt and pepper, to taste

Method

Cook pasta in large pot of boiling water for 3 - 4 minutes. Drain pasta well in large colander.
Add hot pasta to large mixing bowl. Toss with remaining ingredients and serve immediately.
Season to taste with freshly ground black pepper.
