Herbed Bread Stuffing with Onions and Apples

Ingredients

  • 8 tbsp unsalted butter
  • 1 large onion, chopped
  • 1 med Granny Smith apple, peeled, cored and chopped
  • 2 med celery ribs, chopped
  • 8 cups day old firm white bread, cut in 1/2-inch cubes
  • ¼ cup chopped fresh parsley
  • 2 tsp chopped fresh rosemary or 1 tsp of dried rosemary
  • 2 tsp chopped fresh sage or 1 tsp dried sage
  • 1 tsp chopped fresh marjoram or oregano or 1/2 tsp dried marjoram or
  • oregano
  • 1 tsp salt
  • ½ tsp freshly ground pepper
  • 1 cup chicken stock

Method

  1. In a frying pan, melt the butter over medium-high heat. 
  2. Add the onion, apple and celery and cook until the onion is golden about 10 minutes. Transfer to a large bowl.
  3. Add the remaining ingredients and stir in enough stock to moisten. 
  4. Use as a poultry stuffing, stuffing the neck and body cavities loosely, or place the stuffing in a buttered baking dish, cover with foil, and bake in a 325 degree oven for 30 to 40 minutes.

Recipe Notes

Allow about ¾ cup stuffing for each pound of turkey. This recipe is easy to double. Makes about 8 cups stuffing-enough for a 12 pound turkey.
