Herbed Bread Stuffing with Onions and Apples
Ingredients
- 8 tbsp unsalted butter
- 1 large onion, chopped
- 1 med Granny Smith apple, peeled, cored and chopped
- 2 med celery ribs, chopped
- 8 cups day old firm white bread, cut in 1/2-inch cubes
- ¼ cup chopped fresh parsley
- 2 tsp chopped fresh rosemary or 1 tsp of dried rosemary
- 2 tsp chopped fresh sage or 1 tsp dried sage
- 1 tsp chopped fresh marjoram or oregano or 1/2 tsp dried marjoram or
- oregano
- 1 tsp salt
- ½ tsp freshly ground pepper
- 1 cup chicken stock
Method
- In a frying pan, melt the butter over medium-high heat.
- Add the onion, apple and celery and cook until the onion is golden about 10 minutes. Transfer to a large
bowl.
- Add the remaining ingredients and stir in enough stock to moisten.
- Use as a poultry stuffing, stuffing the neck and body cavities loosely, or place the stuffing in a buttered baking dish, cover with foil, and bake in a 325 degree oven for 30 to 40 minutes.

Recipe Notes
Allow about ¾ cup stuffing for each pound of turkey. This recipe is easy to double. Makes about 8 cups stuffing-enough for a 12 pound turkey.
