Fresh Basil and Balsamic Salad Dressing

Ingredients
- 1 quart Jar with tight fitting lid
- 1 medium size onion
- 3 large cloves of garlic
- ¼ cup fresh basil leaves
- 2 tsp dry basil
- 2/3 cup rice vinegar
- ½ cup balsamic vinegar
- ½ cup water
- ½ cup coarse prepared mustard
- ½ cup extra virgin olive oil
- 6 oz fresh mandarin slices (canned as substitute)
- 2 oz pine nuts
- 4 oz crispy rice noodles
- salt and freshly ground pepper to taste
Method
- Peel the onion and the garlic cloves then mince together with fresh basil leaves.
- Place in the jar and add remaining ingredients.
- Shake vigorously and pour over your favorite medley of mixed greens.
- Sprinkle pine nuts and place mandarin slices over the salad and garnish with rice noodles.
Recipe Notes
Refrigerate any unused dressing - this dressing is good for up to 5 days.
