Fresh Basil and Balsamic Salad Dressing

Ingredients

  • 1 quart Jar with tight fitting lid
  • 1 medium size onion
  • 3 large cloves of garlic
  • ¼ cup fresh basil leaves
  • 2 tsp dry basil
  • 2/3 cup rice vinegar
  • ½ cup balsamic vinegar
  • ½ cup water
  • ½ cup coarse prepared mustard
  • ½ cup extra virgin olive oil
  • 6 oz fresh mandarin slices (canned as substitute)
  • 2 oz pine nuts
  • 4 oz crispy rice noodles
  • salt and freshly ground pepper to taste

Method

  1. Peel the onion and the garlic cloves then mince together with fresh basil leaves.
  2. Place in the jar and add remaining ingredients.
  3. Shake vigorously and pour over your favorite medley of mixed greens.
  4. Sprinkle pine nuts and place mandarin slices over the salad and garnish with rice noodles.

Recipe Notes

Refrigerate any unused dressing - this dressing is good for up to 5 days.
