Orange Sabayon

Ingredients

  • 5 cups granulated sugar
  • 3 large egg yolks
  • 1/4 tbsp. grated orange rinds
  • 1/2 cup orange juice
  • Fresh Fruit

Method

  1. In heavy saucepan over low heat or in top of a double boiler over barely simmering water, beat sugar, yolks and orange rind with electric mixer until sugar has dissolved and mixture is creamy. About 3 minutes.
  2. Gradually pour in orange juice, beating constantly. 
  3. Continue beating until mixture is thickens, becomes fluffy and doubles in volume, about 8 minutes.
  4. Spoon mixture over fresh fruit of your choice.
  5. Enjoy!
