Arctic Char with Avocado Salad

Ingredients

  • 4 2oz. filets of arctic char, skinned
  • 1 Tsp. Lime juice
  • 1 Tsp. Soy sauce
  • ˝ cup Sifted all purpose flour
  • 1 Egg beaten
  • ˝ cup Each, cornmeal and bread crumbs
  • 1 Tbsp Each, poppy seeds, sesame seeds, lemon pepper
  • 2 Tbsp Melted butter
  • Salad:
  • 1 Tbsp. Olive oil
  • 4 Tbsp Small diced green and red peppers
  • ˝ Small red onion, diced
  • ˝ Tsp Each, cumin and coriander powder
  • 1 Tsp Lime juice
  • 1 Avocado, diced in 1/4 inch cubes
  • ˝  Cumber, peeled, seeded, diced


Method

  1. Combine the soy sauce and lime juice and marinate the char for 20 minutes.
  2. Combine the cornmeal, breadcrumb, poppy and sesame seeds and lemon pepper.
  3. Dredge the char in the flour, then dip in the beaten egg and finally coat in the breadcrumb mixture.
  4. Place on an oiled oven proof pan and drizzle each piece with the butter.
  5. Bake at 425 F. for 8-10 minutes till crisp.
    Salad:
  6. Sauté the peppers and onions in the oil over medium heat with the spices til tender. Allow to cool.
  7. Combine all ingredients. Season to taste.
  8. Serve the avocado salad with the salmon.
