A recipe contribution from Bill McGregor, chef of Peddlers Too & C. J. Alexander's, Dartmouth, NS

Ingredients

  • 4 x 5oz Atlantic salmon steaks

    Marinade:
  • 1 cup orange juice
  • 1 tbsp soya sauce (low sodium)
  • 2 tsp Dijon mustard
  • 1 tbsp freshly grated ginger root

Method

  1. Pour Marinade ingredients into a shallow marinating pan and stir.
  2. Place salmon steaks in marinade for 30-60 minutes (be careful not to over marinate).
  3. Remove steaks from marinade and place on a hot grill turning the salmon until it becomes flaky in texture.
  4. Remove from grill and place on a plate.
  5. Garnish with a little fresh ginger root and a small sprig of fresh dill.
  6. May be complimented with diced fresh pepper rice and a vegetable stir-fry.
