Oysters Rockefeller

Ingredients

  • 24 oysters on the half shell
  • rock salt
  • 6 strips bacon, finely chopped
  • 1¼ lbs fresh spinach, washed and finely chopped
  • 1 small bunch green onions, finely chopped
  • 2 cloves garlic, crushed
  • 4-5 tbsp fine fresh breadcrumbs
  • dash Tabasco
  • 2 tbsp aniseed liqueur
  • pinch salt
  • parmesan cheese

Method

  1. Loosen oysters from their shells, strain and reserve their liquid. 
  2. Rinse the shells well return an oyster to each one. 
  3. Pour about 1 inch of rock salt into a baking pan and place in the oysters in their shells, pressing each shell gently into the salt.
  4. Place the bacon in a large frying pan and cook slowly to render the fat.
  5. Turn up the heat and brown the bacon evenly.
  6. Add the spinach, green onions and garlic and cook slowly until softened.
  7. Add the breadcrumbs, Tabasco, oyster liquid, liqueur and a pinch of salt. 
  8. Spoon some of the mixture onto each oyster and sprinkle with parmesan cheese. 
  9. Place in a preheated 350°F oven for about 15 minutes. 
  10. Alternatively, heat through in the oven for 10 minutes and place under a preheated broiler to lightly brown the cheese. 
  11. Serve immediately.
