Salmon with Tarragon-Leek Sauce

Ingredients

  • 8 tbsp. butter
  • 4 large leeks, chopped (white & pale green parts)
  • 1¼ cups dry white wine
  • 1¼ cups whipping cream
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh tarragon, chopped
  • 8   6 oz salmon fillets
  • salt & pepper to taste
  • all purpose flour for dusting salmon

Method

  1. In a skillet over med heat sauté the leeks in the butter until soft.
  2. Add wine, reduce until you have two tablespoons of liquid remaining.
  3. Add cream and reduce until thickened.
  4. Add parsley, tarragon salt and pepper to taste.
  5. Remove from heat, set aside and keep warm.
  6. Sprinkle salmon with salt and pepper. Dust lightly with flour. 
  7. Sauté salmon in a non-stick skillet over med-high heat until opaque.
  8. Transfer salmon to plates and spoon sauce over the fillets.
  9. Enjoy!
