Shrimp & Scallop Kabobs

Ingredients

  • 16 jumbo shrimp, peeled and devined
  • 16 sea scallops
  • 1/2 cup vegetable oil
  • 1/4 cup soy sauce
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger - minced
  • 1 tsp onion powder
  • 1 can pineapple chunks - drained
  • 1 large green pepper, cut into bite sized chunks

Method

  1. In medium bowl, combine oil, lemon juice, soy sauce, garlic, ginger and onion powder; mix well. 
  2. Add shrimp and scallops. 
  3. Cover; refrigerate 3 hours or overnight. 
  4. Place shrimp, scallops, pineapple and green peppers on bamboo skewers that have soaked 1 hour in water or on metal skewers. 
  5. Grill or broil 3 to 6 minutes per side or until shrimp are pink, basting frequently with marinade.
  6. Enjoy!
