Corn Chowder

Ingredients

  • 3 medium potatoes, peeled and cut into 1-inch dice (about 3 cups)
  • 4 slices slices bacon, cut into small pieces
  • 1 medium onion, chopped
  • 2 cups corn kernels
  • 3 cups milk
  • Salt and freshly ground pepper

Method

  1. Put the potatoes in a pot large enough to hold all the ingredients; add enough boiling water to cover (about 1 cup) and a dash of salt. Cover and bring to the boil.
  2. Meanwhile, fry the bacon slowly until crisp. Remove and drain on paper.
  3. Add the onions to the skillet and sauté until lightly browned. 
  4. Add the onion and about 2 tablespoons of the bacon fat to the potatoes; add the corn and continue cooking until potatoes are just tender. 
  5. Add the milk and heat to just below boiling. 
  6. Season to taste. 
  7. Ladle into heated bowls, crumb the bacon, and garnish each with it.
