Antipasto Pasta Salad
Ingredients
- 1 19-oz/540 ml can chickpeas, drained and rinsed
- 1 14-oz/398 ml can artichoke hearts, drained, rinsed and quartered
- 2 sweet red peppers, roasted, peeled and cut in strips (about ¾
cup), or ½ cup chopped pimiento
- 2 tbsp chopped hot banana pepper or jalapeno, optional
- 2 cups cooked small pasta (little bows or shells)
- 4 oz lean ham, trimmed, cut in thin strips (about 1 cup)
- 4 oz smoked turkey roll, cut in thin strips (about 1 cup)
- 3 tbsp red wine vinegar, sherry vinegar or balsamic vinegar
- 2 cloves garlic, mince
- 2 tbsp olive oil
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
Method
- In a large bowl, combine chickpeas, artichokes, red peppers, hot pepper (if using), pasta, ham and turkey.
- To make dressing, in a small bowl, combine vinegar, garlic, olive oil and parsley.
- Combine dressing with salad. Taste and add salt and pepper.
