Chunky Banana Muffins
Ingredients
- 1½ cups all-purpose flour
- 1 cup whole wheat flour
- l½ cup wheat bran
- ¾ cup brown sugar
- 1½ tsp baking powder
- ¾ tsp baking soda
- ¼ tsp salt
- ½ cup vegetable oil
- 2 eggs
- ½ cup buttermilk
- 1 tsp vanilla
- 1 cup mashed ripe bananas
- 1 cup diced bananas
- ¾ cup granola, plus 2 tbsp/25 ml for topping
Method
- In a large bowl, combine flours, bran, sugar, baking powder, baking soda and salt.
- In a separate bowl, combine oil, eggs, buttermilk and vanilla. Stir in mashed bananas.
- Add wet ingredients to dry ingredients and stir just until combined. Stir in diced bananas and granola.
- Spoon batter into 12 large lightly oiled non-stick muffin cups.
- Bake in a preheated 350F/180C oven for 25 to 30 minutes, or until brown and firm to touch.
