Healthy Alternative Recipes
Chunky Banana Muffins

Ingredients

  • 1½ cups all-purpose flour
  • 1 cup whole wheat flour
  • l½ cup wheat bran
  • ¾ cup brown sugar
  • 1½ tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • ½ cup vegetable oil
  • 2 eggs
  • ½ cup buttermilk
  • 1 tsp vanilla
  • 1 cup mashed ripe bananas
  • 1 cup diced bananas
  • ¾ cup granola, plus 2 tbsp/25 ml for topping

Method

  1. In a large bowl, combine flours, bran, sugar, baking powder, baking soda and salt.
  2. In a separate bowl, combine oil, eggs, buttermilk and vanilla. Stir in mashed bananas.
  3. Add wet ingredients to dry ingredients and stir just until combined. Stir in diced bananas and granola.
  4. Spoon batter into 12 large lightly oiled non-stick muffin cups.
  5. Bake in a preheated 350F/180C oven for 25 to 30 minutes, or until brown and firm to touch.
