Five-Grain Muffins
Ingredients
- 1 cup five-grain cereal mix or rolled oats
- 1 cup boiling water
- 1 egg
- ½ cup brown sugar
- ¼ cup vegetable oil
- ½ cup buttermilk or low-fat yogurt
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- ¼ tsp cinnamon
- ½ cup chopped dates, raisins or dried apricots
Method
- Place five-grain cereal mix in a large bowl.
- Pour boiling water over top. Allow to rest for 15 minutes.
- Meanwhile, in a separate bowl, beat together egg, brown sugar, oil and buttermilk.
- In a separate bowl, sift or mix together flour, baking powder, baking soda, salt and cinnamon.
- When cereal has softened, stir in egg mixture and then quickly bland in flour mixture. Stir in dates.
- Spoon batter into non-stick, lightly oiled or paper-lined muffin cups (an ice cream scoop works well).
- Bake in preheated 400F/200C oven for 22 to 25 minutes, or until muffins are slightly puffed and firm to touch.
- Remove from pan and cool on a rack.
