Healthy Alternative Recipes
Five-Grain Muffins

Ingredients

  • 1 cup five-grain cereal mix or rolled oats
  • 1 cup boiling water
  • 1 egg
  • ½ cup brown sugar
  • ¼ cup vegetable oil
  • ½ cup buttermilk or low-fat yogurt
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • ½ cup chopped dates, raisins or dried apricots

Method

  1. Place five-grain cereal mix in a large bowl. 
  2. Pour boiling water over top. Allow to rest for 15 minutes.
  3. Meanwhile, in a separate bowl, beat together egg, brown sugar, oil and buttermilk.
  4. In a separate bowl, sift or mix together flour, baking powder, baking soda, salt and cinnamon.
  5. When cereal has softened, stir in egg mixture and then quickly bland in flour mixture. Stir in dates.
  6. Spoon batter into non-stick, lightly oiled or paper-lined muffin cups (an ice cream scoop works well). 
  7. Bake in preheated 400F/200C oven for 22 to 25 minutes, or until muffins are slightly puffed and firm to touch. 
  8. Remove from pan and cool on a rack.
