Oatmeal and Ginger Florentines
Ingredients
- 3 eggs
- ¾ cup granulated sugar
- ¾ cup brown sugar
- ¾ tsp vanilla
- finely grated peel of 1 orange
- 2 tbsp unsalted butter, melted
- 4 tsp baking powder
- 3½ cups old-fashioned rolled oats (not quick-cooking)
- ½ cup diced candied orange peel
- ¼ cup diced candied ginger
- 2 oz bittersweet or semisweet chocolate, melted, optional
Method
- In a medium bowl, beat eggs with granulated sugar, brown sugar, vanilla and orange peel. Beat until very thick and light, about 3 minutes.
- Beat in melted butter.
- Add baking powder (strain or sift if it is lumpy) and beat just until mixed.
- Stir in rolled oats, candied orange peel and candied ginger.
- Drop batter by level teaspoon onto baking sheets lined with parchment paper or foil. Cookies should be about 2 inches/5 cm apart.
- Bake in preheated 350F/180C oven for about 8 to 10 minutes, or until nicely browned. Rotate position of baking pans halfway through baking.
- Slide cookies and paper off baking sheet onto counter to cool for a few minutes. Cookies will then peel off paper easily.
- Cool completely on racks.
- Place melted chocolate (if using) in a small plastic zipper bag.
- Twist bag so chocolate is in one corner.
- Cut off tip of corner so that there is a tiny opening and drizzle a little chocolate back and forth over cookies (or just drizzle using small spoon).
- Allow chocolate to set.
