Healthy Alternative Recipes
Oatmeal and Ginger Florentines

Ingredients

  • 3 eggs
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • ¾ tsp vanilla
  • finely grated peel of 1 orange
  • 2 tbsp unsalted butter, melted
  • 4 tsp baking powder
  • 3½ cups old-fashioned rolled oats (not quick-cooking)
  • ½ cup diced candied orange peel
  • ¼ cup diced candied ginger
  • 2 oz bittersweet or semisweet chocolate, melted, optional

Method

  1. In a medium bowl, beat eggs with granulated sugar, brown sugar, vanilla and orange peel. Beat until very thick and light, about 3 minutes. 
  2. Beat in melted butter.
  3. Add baking powder (strain or sift if it is lumpy) and beat just until mixed. 
  4. Stir in rolled oats, candied orange peel and candied ginger.
  5. Drop batter by level teaspoon onto baking sheets lined with parchment paper or foil. Cookies should be about 2 inches/5 cm apart. 
  6. Bake in preheated 350F/180C oven for about 8 to 10 minutes, or until nicely browned. Rotate position of baking pans halfway through baking.
  7. Slide cookies and paper off baking sheet onto counter to cool for a few minutes. Cookies will then peel off paper easily. 
  8. Cool completely on racks.
  9. Place melted chocolate (if using) in a small plastic zipper bag. 
  10. Twist bag so chocolate is in one corner. 
  11. Cut off tip of corner so that there is a tiny opening and drizzle a little chocolate back and forth over cookies (or just drizzle using small spoon).
  12. Allow chocolate to set.
