Healthy Alternative Recipes
Fruit Salad "Margarita"

Ingredients

  • 3 oranges
  • 4 cups strawberries
  • 2 kiwis
  • 1 small pineapple
  • 1 ripe mango
  • 1/3 cup limeade concentrate
  • 1/3 cup orange juice
  • 1/3 cup ginger ale

Method

  1. Cut top and bottom off each orange. 
  2. Holding orange in place on a cutting board, cut off peel from top to bottom, exposing segments. 
  3. Cut out orange segments from between membranes (do this over a large bowl to catch the juices).
  4. Remove hulls from strawberries and cut each berry in half or quarters depending on their size. 
  5. Peel kiwis and cut each one into 6 to 8 chunks. 
  6. Cut pineapple into chunks. 
  7. Peel mango and cut into chunks. 
  8. Toss all fruit together.
  9. Combine limeade, orange juice and ginger ale in a small bowl. 
  10. Pour over fruit and toss. 
  11. Marinate for up to 1 hour at room temperature or longer in the refrigerator.
