Healthy Alternative Recipes
Rack of Lamb with Honey Crust

Ingredients

2 racks of lamb (with 7 ribs each), trimmed (about 1 lb each)
2 tbsp balsamic vinegar
2 tbsp chopped fresh rosemary, or 1/2 tsp/2ml dried
2 tbsp chopped fresh thyme, or 1/2 tsp/2 ml dried
1 tsp pepper
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp olive oil
2 tbsp Dijon mustard
2 tbsp honey
1 cup fresh breadcrumbs

Method

  1. Remove any visible fat from lamb.
  2. In a small bowl, combine vinegar, rosemary, thyme, pepper and garlic. 
  3. Rub on lamb and marinate for 30 minutes at room temperature or up to overnight in refrigerator.
  4. Just before cooking, pat lamb dry. Season with salt.
  5. Heat oil in a heavy non-stick skillet on high heat. 
  6. Brown lamb for 2 to 3 minutes.
  7. In a small bowl, combine mustard and honey. 
  8. Smear on lamb. 
  9. Place lamb on baking sheet and roast in a preheated 400F/200C oven for 15 minutes.
  10. Remove lamb from oven. 
  11. Pat breadcrumbs into top side of lamb. 
  12. Return to baking sheet. 
  13. Roast again for about 10 minutes, or until a meat thermometer registers 130 to 140F/55 to 60C (for rare) when inserted into muscle of meat. 
  14. Allow racks to rest for 5 to 10 minutes before carving by slicing between bones.
