Rack of Lamb with Honey Crust
Ingredients
2 racks of lamb (with 7 ribs each), trimmed (about 1 lb each)
2 tbsp balsamic vinegar
2 tbsp chopped fresh rosemary, or 1/2 tsp/2ml dried
2 tbsp chopped fresh thyme, or 1/2 tsp/2 ml dried
1 tsp pepper
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp olive oil
2 tbsp Dijon mustard
2 tbsp honey
1 cup fresh breadcrumbs
Method
- Remove any visible fat from lamb.
- In a small bowl, combine vinegar, rosemary, thyme, pepper and garlic.
- Rub on lamb and marinate for 30 minutes at room temperature or up to overnight in refrigerator.
- Just before cooking, pat lamb dry. Season with salt.
- Heat oil in a heavy non-stick skillet on high heat.
- Brown lamb for 2 to 3 minutes.
- In a small bowl, combine mustard and honey.
- Smear on lamb.
- Place lamb on baking sheet and roast in a preheated 400F/200C oven for 15 minutes.
- Remove lamb from oven.
- Pat breadcrumbs into top side of lamb.
- Return to baking sheet.
- Roast again for about 10 minutes, or until a meat thermometer registers 130 to 140F/55 to 60C (for rare) when inserted into muscle of meat.
- Allow racks to rest for 5 to 10 minutes before carving by slicing between bones.
