Healthy Alternative Recipes
Stuffed Baked Potatoes

Ingredients

  • 3 large baking potatoes (about 9 oz/280 g each)
  • 1 tsp ground cumin
  • ½ cup low-fat yogurt or light sour cream
  • ½ cup grated old Cheddar or crumbled blue cheese
  • 3 green onions, chopped
  • ½ tsp salt
  • ½ tsp pepper

Method

  1. Scrub potatoes. 
  2. Place on a baking sheet and bake in a preheated 400F/200C oven for 1 to 1 1/2 hours, or until potatoes are very tender.
  3. Cut potatoes in half lengthwise and gently scoop out flesh, leaving a shell 1/4 - 1/2 inch - 5 mm - 1 inch thick.
  4. Mash potatoes in a single layer on baking sheet. 
  5. Reheat at 400F/200C for 20 minutes, or until thoroughly heated.
