Stuffed Baked Potatoes
Ingredients
- 3 large baking potatoes (about 9 oz/280 g each)
- 1 tsp ground cumin
- ½ cup low-fat yogurt or light sour cream
- ½ cup grated old Cheddar or crumbled blue cheese
- 3 green onions, chopped
- ½ tsp salt
- ½ tsp pepper
Method
- Scrub potatoes.
- Place on a baking sheet and bake in a preheated 400F/200C oven for 1 to 1 1/2 hours, or until potatoes are very tender.
- Cut potatoes in half lengthwise and gently scoop out flesh, leaving a shell 1/4 - 1/2 inch - 5 mm - 1 inch thick.
- Mash potatoes in a single layer on baking sheet.
- Reheat at 400F/200C for 20 minutes, or until thoroughly heated.
