Healthy Alternative Recipes
Italian Turkey Meatloaf

Ingredients

  • 1 lb baking potatoes or Yukon gold potatoes
  • 1 egg
  • 2 tsp salt
  • 1 tsp pepper
  • ½ tsp grated lemon peel
  • ½ tsp fresh breadcrumbs
  • ½ cup chopped fresh parsley
  • 2 tsp chopped fresh rosemary or 1/2 tsp/2 ml dried
  • 2 tsp chopped fresh oregano or 1/2 tsp/2 ml dried
  • 1 lb lean ground turkey breast
  • 1 tbsp olive oil
  • ½ cup dry white wine or homemade chicken stock
  • 1   28-oz/796 ml can plum tomatoes, pureed with juices

Method

  1. Peel and quarter potatoes and place in a large pot of water to cover. 
  2. Bring to a boil and simmer gently until tender, about 20 minutes. Drain well and cool.
  3. Mask potatoes with egg, salt, pepper, lemon peel, breadcrumbs, parsley, rosemary and oregano. 
  4. Add turkey and combine well. 
  5. Shape mixture into a flattened ball about 8 inches/20 cm in diameter and about 2 inches/5cm thick.
  6. Heat oil in a 10-inch/25 cm non-stick ovenproof skillet on high heat. 
  7. Gently add meatloaf and cook for a few minutes until browned on bottom.
  8. Carefully turn over and cook for a few minutes longer.
  9. Add wine and spoon tomatoes over and around meat.
  10. Cover and bake in a preheated 350F/180C oven for 30 minutes. 
  11. Uncover and bake for 30 minutes longer, basting with tomatoes. 
  12. Cut into wedges or slices to serve. 
  13. Spoon tomato sauce over top.
