Italian Turkey Meatloaf
Ingredients
- 1 lb baking potatoes or Yukon gold potatoes
- 1 egg
- 2 tsp salt
- 1 tsp pepper
- ½ tsp grated lemon peel
- ½ tsp fresh breadcrumbs
- ½ cup chopped fresh parsley
- 2 tsp chopped fresh rosemary or 1/2 tsp/2 ml dried
- 2 tsp chopped fresh oregano or 1/2 tsp/2 ml dried
- 1 lb lean ground turkey breast
- 1 tbsp olive oil
- ½ cup dry white wine or homemade chicken stock
- 1 28-oz/796 ml can plum tomatoes, pureed with juices
Method
- Peel and quarter potatoes and place in a large pot of water to cover.
- Bring to a boil and simmer gently until tender, about 20 minutes. Drain well and cool.
- Mask potatoes with egg, salt, pepper, lemon peel, breadcrumbs, parsley, rosemary and oregano.
- Add turkey and combine well.
- Shape mixture into a flattened ball about 8 inches/20 cm in diameter and about 2 inches/5cm thick.
- Heat oil in a 10-inch/25 cm non-stick ovenproof skillet on high heat.
- Gently add meatloaf and cook for a few minutes until browned on bottom.
- Carefully turn over and cook for a few minutes longer.
- Add wine and spoon tomatoes over and around meat.
- Cover and bake in a preheated 350F/180C oven for 30 minutes.
- Uncover and bake for 30 minutes longer, basting with tomatoes.
- Cut into wedges or slices to serve.
- Spoon tomato sauce over top.
