Vegetable Stir-Fry
Ingredients
- 2 tsp vegetable oil
- 2 cloves garlic, finely chopped
- 1 tbsp finely chopped fresh ginger root
- 3 green onions, sliced
- 1 onion, sliced
- 2 carrots, sliced on the diagonal
- 1 zucchini, sliced on the diagonal
- 1 sweet red, green, or yellow pepper, sliced
- 1 cup green beans, trimmed and sliced on the diagonal
- 8 shiitake mushrooms, stemmed and sliced
- 1 small head broccoli, trimmed, with stems sliced and florets broken into
pieces
- ¼ cup homemade vegetable stock or water
- 1 cup snow peas, trimmed
- 2 tbsp hoisin sauce, teriyaki sauce, soy sauce or oyster sauce
- ½ tsp sesame oil
Method
- Heat vegetable oil in a wok or large, deep non-stick skillet on medium-high heat.
- Add garlic, ginger and green onions.
- Cook for 30 seconds but do not burn.
- Add onion, carrots, zucchini and pepper. Stir-fry for 2 to 3 minutes.
- Add green beans, mushrooms, broccoli and stock. Cook for 2 to 3 minutes.
- Cook, covered, for 1 more minute if necessary to help cook broccoli.
- Add snowpeas and hoisin sauce and bring to a boil.
- Cook for 1 minute.
- Stir in sesame oil. Serve immediately.
