Healthy Alternative Recipes
Vegetable Stir-Fry

Ingredients

  • 2 tsp vegetable oil
  • 2 cloves garlic, finely chopped
  • 1 tbsp finely chopped fresh ginger root
  • 3 green onions, sliced
  • 1 onion, sliced
  • 2 carrots, sliced on the diagonal
  • 1 zucchini, sliced on the diagonal
  • 1 sweet red, green, or yellow pepper, sliced
  • 1 cup green beans, trimmed and sliced on the diagonal
  • 8 shiitake mushrooms, stemmed and sliced
  • 1 small head broccoli, trimmed, with stems sliced and florets broken into pieces
  • ¼ cup homemade vegetable stock or water
  • 1 cup snow peas, trimmed
  • 2 tbsp hoisin sauce, teriyaki sauce, soy sauce or oyster sauce
  • ½ tsp sesame oil

Method

  1. Heat vegetable oil in a wok or large, deep non-stick skillet on medium-high heat. 
  2. Add garlic, ginger and green onions. 
  3. Cook for 30 seconds but do not burn.
  4. Add onion, carrots, zucchini and pepper. Stir-fry for 2 to 3 minutes.
  5. Add green beans, mushrooms, broccoli and stock. Cook for 2 to 3 minutes.
  6. Cook, covered, for 1 more minute if necessary to help cook broccoli.
  7. Add snowpeas and hoisin sauce and bring to a boil. 
  8. Cook for 1 minute. 
  9. Stir in sesame oil. Serve immediately.
