Cauliflower with Paddy-Straw Mushrooms

Ingredients

  • 1 Small Cauliflower cut into florets the white part of a leek, cleaned and sliced
  • 1 tbsp Soy Sauce 
  • ˝ tsp Sugar
  • 1 tbsp Oil
  • 4 oz Canned paddy-straw mushrooms, drained 

Method

  1. Slice the cauliflower lengthways into thin slices and reserve. 
  2. Mix the soy sauce, 1 tbsp of water and sugar together in a small bowl.
  3. Heat the oil in a wok or frying pan over medium-low heat and sauté the leek for 1 minute. 
  4. Add the cauliflower and cook, stirring for 1 minute. 
  5. Pour in 1-2 tbsp cold water, cover and simmer over low heat for 2-3 minutes.
  6. Add paddy-straw mushrooms and the soy sauce mixture and continue to cook covered, for 2-3 minutes.
  7. Serve at once.
  8. Enjoy!
